To reset a character's level, go to that specific character in your Roster and tap the "Reset" button. Thsi will return all of the XP, Coins, and Goo that you used to level up that character back to your inventory.

Character reset only impacts the character's level, and doesn't impact a character's star rarity or promotion status.
